  • 1 whole boneless chicken breast
  • 1/2 onion
  • 2 garlic cloves

  • 8 green tomatoes/ 400gr
  • 2 garlic cloves
  • 1 serrano chile
  • 1 sprig of fresh coriander
  • 1/4 chicken broth
  • Salt to taste

  • 1/4 of oil
  • 12 corn tortillas
  • 500 gr of Oaxacan cheese
  • Cream to taste
  • 1/2 of onion rings or chopped onion

Preparation method:

To cook the chicken:

  1. In a cooking pot place the chicken, half onion and garlic. Fill the pot with water and cover the pot.
  2. Let it boil for at least 25 min or until de the chicken is completely cooked. Skim off the foam that comes out on the surface of the broth and discard it.
  3. When the chicken is fully cooked, carefully remove it from the broth and allow it to cool slightly. Let it cool for 8min, shred it and reserve. Also keep the chicken broth
